Quinoa Breakfast Bowls
I love oatmeal , no really I do love it, I eat it almost every day, but once in awhile I like a change
This yummy a quinoa bowl, loaded with protein and cooks up into a creamy porridge when you use your favorite milk.
Stir in a drizzle of maple syrup and cinnamon, and top with any fruit you like.
Fresh berries would be delicious in summer, but when not in season try freeze dried fruit.

1 1/2 cups quinoa
3 cups unsweetened soy milk
1 teaspoon ground cinnamon
Salt just a tiny pinch
1 tablespoons maple syrup*
1 teaspoons pure vanilla extract
½ cup chopped walnuts, toasted, unsalted
1 cup freeze-dried strawberries- or raspberries or blueberries
In a saucepan over medium-high heat, toast the uncooked quinoa, stirring frequently, until fragrant, about 2 minutes. Remove from heat. Add the milk, cinnamon, and pinch of teaspoon salt. Return the pan to medium heat and bring to a simmer. Cover, reduce the heat to low, and cook without stirring until the grains are tender, 15 to 18 minutes.
Remove from the heat and stir in the maple syrup and vanilla. Cover and set aside for 5 minutes.
Spoon the quinoa into bowls. Top with the the walnuts and freeze-dried strawberries and raspberries and serve warm.
*NOTE if you cannot have maple syrup just add a bit stevia or splenda and a hint of maple extract about 1/2 teaspoon
Add raisins,figs,granola,almonds pecans make it your way
