Chicken Taco Skillet

This meal comes together in no time, thanks to a pound of quick cooking ground chicken and some fresh it frozen veggies.

I use ground Chicken but Ground turkey or lean ground beef would work too.

Plus when you add the salsa with taco seasoning it adds a ton of flavor.

One-Pan Chicken Taco Skillet


• 1 pound ground chicken

• Chop 1 cup each bell pepper and onion

• 1/2 cup frozen corn

• 1 cup salsa of your choice

• 2 tbsp taco seasoning (see recipe below )

• 1 can black beans rinsed

• 1 -2 cups shredded cheddar cheese options

• 1 green onion sliced to garnish


In a large skillet, cook ground chicken; breaking it up with a spatula.

Add taco seasoning and then corn and peppers.

Cook for 5 minutes now add black beans stir .

Add salsa and heat for another few minutes until it is warm.

Top with cheese and green onions.

Serve over rice, quinoa, in a baked potato, cauliflower rice, inside tacos shells/wraps, or with tortilla chips

Homemade Taco Seasoning:

What you will Need

• 6 tablespoons chili powder

• 4 tablespoons cumin

• 2 tablespoon paprika

• 1 teaspoon salt

• 1 tablespoon garlic powder

• 1 teaspoon dried onion

• 2 teaspoon oregano

•  1 teaspoon black pepper

• 1 tablespoon cornstarch (optional)

Add all the spices to a small mason jar.

Cover tightly and shake! Enjoy on chicken, fish, shrimp, or beef!

Tip: 2-3 tablespoons of taco seasoning is equivalent to 1 packet of those store bought taco seasoning mixes
